In this week's edition of Cooking with Phil, Chef Phil Murray makes Beef Brisket braised in Brown Ale.
1 beef brisket
1 bunch celery
6 whole garlic cloves
1 tbl of fresh/dried thyme
1 tbl fresh/dried oregano
All vegetables washed and rough chopped approximately 2 inch pieces.
2 bottles Shorts Bellaire Brown beer
1/4 cup olive oil
1 large roasting pan with lid
Get pan hot and add olive oil. Sear brisket on both sides. Add vegetables and beer and bring to a boil. Place in oven at 325 degrees and cook for 3 1/2 hours or until very tender.
Once cooked let rest for 30 minutes. Take out of pan and slice and garnish with vegetables. Season with salt and pepper.
