Forget Captain Crunch! Phil likes fungus for breakfast

"It's nice to have an omelette, especially when you run out of Captain Crunch for breakfast," said chef Phil Murray, owner of Phil's on Front in Traverse City.

This week Phil is sharing his Irish Mushroom Omelette recipe:


3 Farm fresh eggs

Portabello and shiitake mushrooms (chopped or sliced)

Grated or sliced Irish cheddar cheese

Cooking sherry


Cooking Directions:

Crack eggs into bowl and whip. Phil suggests you let a lot of air in so the eggs get fluffy.

"The eggs are free-range," said Phil. "The chicken's have a lot of fun... they're relaxed and you get a better egg."

Get a saute pan hot and put in butter to coat pan. Toss in mushrooms and a shot of sherry. Saute. Put eggs in another pan and let slowly cook. When almost done, put cheese and mushrooms on top. Once done, fold omelette over onto plate. Top with leftover mushrooms.
