      Phil's got a sweet beet this Valentine's Day

      We're cooking with chef Phil Murray from Phil's on front in Traverse City.

      "This is a heart healthy, delicious thing," says Phil. "That's hard for me to say, heart healthy, because I'm a bacon fan. What can I say."

      Phil is helping you create some of his favorite dishes in your own kitchen every week on UpNorthLive Tonight on ABC 29&8.

      This week, Phil is sharing his Golden Beet Arugula Salad with Honey Champagne Vinaigrette:


      2 Large golden beets

      6 oz. Fresh, organic arugula

      1/2 Cup champagne vinegar

      1/2 Cup local, organic honey

      1/4 Cup olive oil

      Juice of 1 lemon

      Salt & Pepper

      Cooking Directions:

      Wash beets. Season with olive oil and roast at 350 degrees for approximately 40 minutes (or until soft and tender). Peel and slice, marinate in olive oil, salt and pepper, to taste. You may serve these cold, or grill and serve warm.

      "Beautiful little beet. Yummy, yummy," says Phil.

      Combine vinegar, honey and lemon juice for Honey Champagne Vinaigrette dressing. Add salt and pepper, and mix in bowl.

      Place arugula on center of plate with grilled or chilled beet slices. Drizzle with Honey Champagne Vinaigrette.
