Phil's un-eggspected egg-ceptional omelette recipe

Chef Phil Murray, owner of Phil's on Front restaurant in Traverse City, is helping you create some of his favorite dishes in your own kitchen every week on UpNorthLive Tonight on ABC 29&8 at 6:30 p.m.

This week Phil shares his quick and easy omelette recipe. Phil said, "cook it so it's yellow!"

"Let me give you a word of advice," said Phil. "If you go to a local restaurant and you get an omelette with brown on it.... you send it back!"


3 Organic eggs

Any vegetables, meat or cheese you'd like

Salt & pepper to taste

1 tsp. unsalted butter

Cooking Directions:

Crack eggs into bowl and quickly wisk with fork. Once mixed, get a 10-inch sauce pan hot (make sure it is completely hot before you place eggs in). After pouring mixture in, use a spatula to keep the eggs even. Phil said this will make sure it doesn't turn brown and overcook.

"Pay attention to it and keep it moving," said Phil.

Gently roll the sides of your omelette, about an inch or two. Place ingredients inside, then roll or fold the ends of the omelet, closing in the ingredients!
