New Spirits in Manistee County
Manistee County —
Manistee County will soon have its own farm-to-bottle distillery.
Ground was broken Monday in Springdale Township for the new Iron Fish Distillery.
Founded by four partners with ties to the area, Iron Fish will produce whiskey, gin, vodka, and other spirits using ingredients grown on site and from other farms in northern Michigan.
The partners discussed building the facility in various locations, but settled on a farm-based tasting room.
"This being so close to home and being more of a personal location; maybe it was a gut feeling that being on the land, growing our own crops, using those crops to make our own whiskey was the right thing to do," said Dave Wallace, who, along with his wife, Heidi Bolger and fellow partners Sara and Richard Anderson, is behind the new distillery.
The still is being built in Germany and should be delivered and installed around the first of the year.
The distillery could be open by next spring.
